Winters in New England are all about Comfort Food!

The Super Bowl roasted pork shoulder went a long way that day.  I seasoned it with Lyndigo's Original Spice Rub and roasted it for hours.  After shredding it, I mixed it with some Smokey Peach & Cherry Chutney and made soft tacos and put it on top of homemade wholegrain tortilla chips and topped them off with a chayote & cabbage slaw.  I didn't forget the chili!  Yes, the shredded pork went in the pot with all the chili making essentials and was finished off with an entire jar of Peach & Cherry Chutney. A perfect match, I must say!

Meatloaf is totally on the list of ultimate comfort foods.  I put a whole jar of Lyndigo's Savory Red Pepper Relish on top and baked it!  It was so delicious.  I like it the next day cold on a sandwich with more relish.  

I initially roasted off chickpeas and tossed them in Lyndigo's Original Spice Rub for tasting at the Farmer's Market, but people wanted to buy them.  So I bagged them up and they are now for sale at the market.

Feeling the love from Crave What's Natural!

Live life to the fullest.  I know that sounds like a cliché, but it is important to accomplish everything you want to in this life because you only get one.  I now understand why the older generations create “bucket lists”.  They want to do the things they never allowed themselves to do.

Many of us looked at dreams as unattainable, wishful thinking.  It is very easy to go into survival mode and get stuck.  You work hard to provide for your family.  That often means staying in a “stable” albeit unfulfilling job.  You no longer have time to chase dreams or are fearful of the instability of dream chasing.  I have been able to realign myself so that my dreams become more attainable.  With this new found wisdom, I find myself rejoicing with others when they walk into their destiny.

Carmen has been my taste tester from the beginning.  I would call her first thing in the morning with a new flavor, as all my recipes come to me in my dreams.  Yes, I dream about food!  That phone call is usually followed by a box of samples for her to try and critique.  She always reminds me to write down my recipes because I never do.  I just go in the kitchen and cook.  I have since mastered (somewhat) scribing the recipes by creating my line of Lyndigo Spice products.

I came to tears reading Toni’s blog about me. It was kind of surreal reading about what other people see in you. Yes, I am all of those things she said about me! People ask how do I do it all and I just tell them that I don’t have time to think about doing it, I just get it done. I tell my sons and anyone that is out there with a dream, “follow it”. Your life will never be whole without doing so. In my case, there may be a shelf life to my products (that’s one year unopened by the way), but there’s no shelf life to your dreams!
